It's May, by all accounts it should be spring and there should be more Sunlight. But no. It all looks like an emotionally loaded comeback of Autumn.
Here's how we level up our day, and still stay mellow while lifting the energy levels when going through our working day: Make Muffins! Yes, Muffins.

You will need:
1tbsp of Chaga, 4 ripe bananas, 2tbsp of Cacao powder,3-4 tbsp. of Carob, 1 cup of GF flour ( we used buckwheat, you do you), 1tsp of baking soda, 2tbsp of coconut oil(ghee works too so does butter) , 4-5tbsp coconut sugar, 1 cup of fresh blueberries-raspberries, half of cup of goji berries, a handful of pecan nuts, pinch of salt, cup of any milk (we used coconut-rice mylk). Preheat the oven (keep it on low).
Combine dry ingredients. In another bowl combine bananas, coconut oil and milk. Add the dry ingredients and mix until evenly combined. If necessary add a tad bit more milk. Add the berries and nuts. Prepare the baking dish of your choice (muffin or cake if you like living on the edge). Slather the batter in it and bake at 200°C for 30-40 min, and occasionally check with the toothpick if any batter stays on it, when it comes out clean your happiness is baked and ready. Let it cool down and have it with a warm and honey-sweetened drink.
Why Chaga? It supports your immune system, is rich in antioxidants, it is also antimicrobial, anti-inflammatory and antiviral. A high antioxidant content helps to reverse oxidative stress that can influence anxiety.
Irregular change in weather and not enough sunshine can lower our mood and overall health. Here enters Chaga with its support to your cells communicating with each other better and with it supporting your immune system.

P. S. Sometimes making this ahead of going to dentist is all you need. Something to look forward to, to think about waiting for you at home. It works for us.
