Tomato Gazpacho


Eaten fresh and prepared fast, no heating required so all the good properties are still "attached" to all of your ingredients. Warm soups are not the only option when it comes to integrating healthy veggies. Heating is known to deplete certain nutritional values, but warm or cold we honestly love both options, no preference.

As the only tool, you will need a blender.


Two fresh cucumbers, skin included

Six to seven tomatoes, on the bigger side of the size spectrum.

One head of fresh onion

Fresh garlic cloves, the amount depends on your preference. I use 3 of medium size.

Rich pinch of salt and pepper and cumin seed in powder.

Rich splash of Olive oil. 

One cup of water.

Chopp all the ingredients.

Blend everything together until smooth.

Serve it right away, garnished with fresh basil leaves and a drizzle of olive oil and optional lemon squeeze. Croutons go well with it as does a slice of toasted bread "massaged" with butter and garlic clove.
